Due to the oxidation of (lipid) fats and oils, the quality of green coffee beans quickly deteriorate in traditional bulk size packaging. With the introduction of fully hermetic, protective packaging with aluminum or EVOH barrier film, and the possibility to create & maintain modified gas conditions inside bulk-size packaging, long-term preservation of green coffee beans in bulk bags is now possible.
“Environmental temperature and RH during storage must be controlled to maintain the quality of the coffee without losing its intrinsic sensory characteristics and physicochemical properties. It has been observed that when green coffee is stored at RH above 60 % and temperatures above 25 °C, there can be cell degradation, leading to oil leakage and a loss in the chemical composition of coffee beans.”

Storage of GC in modified atmospheres preserved water activity, which is an important quality indicator of this product, as it is closely related to color change, loss of reducing sugars, fungal growth, and OTA production.”
